Henry's Garlic Cheese Butter (Henry Roo?) 1 head garlic (yeah, whole head of many cloves) 1 lb butter 1/4 lb NY Sharp Cheddar 1/2 cup wine vinegar 1/4 cup grated parmesan 1/2 Tablespoon beaumonde little salt (optional, I recommend not, there is salt in beaumonde seasoning)
Soften butter, grate cheese. Mash everything but wine vinegar together. Add wine vinegar slowly. Good on steamed vegetables and crusty french bread.
makes 2.5 pints
