Baking Powder Biscuits
Basic Recipe
- 1.5 cups all purpose flour (NOT bread flour)
- .5 cup whole wheat flour
- 3/4 cup milk + a little
- 1/2 tsp salt
- 4 tsp baking powder
- 4 tablespoons (2oz) butter
Don't bother sifting. Mix dry ingredients. Chop cold butter into little chunks, use hands to rub into flour. Add milk and mix, should make into a thick biscuit dough. Don't bother mixing very much, don't want to really 'knead' it at all. Bake on ungreased sheet in a 400-425 degree oven for 12-15 minutes.
Dough should be a little bit wet-sticky rather than dry on the surface. If you have super crazy baking powder, cut down on the baking powder. This is doubled from the recipe we started with.

Comment: These have now come out too flat a couple times in a row. Maybe we're using a bad baking powder. maybe we should not use any whole wheat flour

2 x baking powder to see if that helps, yes, a little extra milk
