Baking Powder Biscuits
Basic Recipe
- 2 cups all purpose flour (NOT bread flour)
-- erowid variant came out great, replace 1/4 of flour with whole wheat pastry flour
- 3/4 cup milk
- 1/2 tsp salt
- 2 tsp baking powder
- 4 tablespoons (2oz) butter
Don't bother sifting. Mix dry ingredients. Chop cold butter into little chunks, use hands to rub into flour. Add milk and mix, should make into a thick biscuit dough. Don't bother mixing very much, don't want to really 'knead' it at all. Bake on ungreased sheet in a 400-425 degree oven for 12-15 minutes.
